Does anyone here cook with or use "fresh" Epazote? How is it to grow?

Hello Ladyhawke
HiDelight definitely cooks with it if that is any help -- you could PM her. I don't know if she grows it though...!

Hey Lady I have been offline with horrible tendinitis
so I avoided looking at boards because I knew I would feel compelled to type and then the cycle of this crap would continue
today is much better however
I love this herb and did make a thread someplace on here about it
I did not look at your links yet but I grow it and sometimes it will reseed here and come back but usually I have to replant it
it is a wonderful herb and I usually use it in beans as Obessessed said
I can not make a pot of pintos with out it and I have never ever had anyone complain they had any kind of beany effect from my beans so I swear it is the epazote that helps digest the gas causing beans ...
I have used the leaves in salads it was "ok" but it is a great tea for lower GI stuff ...best thing on the planet for gas pains I hear
so beans and salads are about it for me it is very strong and must be used in small amts if one tsp rubbed dried epazote for an entire pot of beans is plenty
it kind of smells like old books to me but I like old books so I like the smell epazote
I will have to check the link out you posted to see what else we can do with this wonderful herb
I have a chicken green chile dish I put some in ..it does go well in green chile stew

HiDelight, sorry to hear about the tendonitis....
I have a question....after you've cooked and prepared the pot of beans w/ epazote, does it still have a strong flavor? I like the fact that it can prevent gas, but I dunno if the fam would be too wild about a strong/strange flavor....

Hi there C! .. this really is miserable but getting better so thank you thank you!
as far as the beans go ..no one notices I put anything different in the beans ...but they do really like my beans because there is never any left!! it is the secret little something and when you use just a tiny bit it adds a wonderful taste that you can not distiguish ..it blends so well ..
so try it and just use a little see how it goes I say a full tsp crumbled dried (I think I said it wrong above I should go correct that) ..or a tiny handful of fresh leaves minced work fine to a pound of beans
enjoy epazote it is another very nice healthy herb!
