I've been freezing my garden cukes for 2 years now, and this year I finally had the bright idea to try and freeze them whole and see if when they thaw they are still good to eat. They actually work better that way. Awesome so the only prep work I will have to the cukes is putting them in the freezer bag

Whoa, now What? How do you eat them when they thaw? Are they mushy like a frozen tomato? Do you put them in salads, or .....?

I eat them like regular cukes. They stay crunchy. They release quite a bit of liquid when thawing, and have a more translucent color, a slightly different texture then fresh, but I think better then the store bought.

Try it, just put a cuke in the freezer for a couple of days and take it out thaw and taste it, I think you will be pleasantly surprised.

Never heard of doing that but I will try anything, at least once. :D
I have froze the vinegar cucumber onion salad stuff ( I don't make it, I just eat it :p ) ... and it is wonderfully fresh tasting at least 3-4 months later. I have to check with DH for the recipe.

When you thaw them it will look like it didn't work, but go ahead and try them, they will be better then they look

And here I thought cucumbers were only good fresh or as a pickle. I have been missing the cucumber boat.
