I always toss in a small amount of tapioca granules. Maybe 1/8 c. It seems to work really well in absorbing the extra juice without changing the flavors.

I do the same as @moxies_chickienuggets The recipe I have for Strawberry rhubarb pie calls for 1/4 to 1/3 cup minute tapioca.

I never thought about using tapioca. I think you get an apple taste from pectin.
