Stewed Tomatoes & Okra

A delicious southern classic, stewed tomatoes & okra is oh sooo good!!!

3 Slices of bacon, chopped
1 Quart stewed tomatoes, chopped
1 Large onion, chopped
20-25 Okra
2 Large cloves garlic
Salt & pepper to taste
Cajun seasoning (Slap Ya Mama or Tony's), to taste


Cook the bacon until its crisp, in a large skillet. Then simply dump the rest of the ingredients into the same skillet & just let everything simmer together. The okra is done when its soft & turns from bright green to darker green. Serve immediately over a bed of rice (I prefer brown rice myself). Enjoy!!!

If it's cooked right it's not slimy. I love it stewed, fried, and pickled! Fun to grow. Even the dried pods are interesting in flower arrangements.

Okra- the slimy is greatly eliminated when adding acid foods like tomato, lemon juice and vinegar.
Makes it almost non-existent.

And I love to make the stewed okra, with fresh garden okra and tomatoes. I use sausage though, instead of bacon.
And I top it with home made croutons....omg...so yummy. :drool

I am from Missouri also...and had to learn to love it when I lived down in the Biloxi area for 15 years. Nothing beats the saying .."When in Rome..." eating fresh, eating local....
