I think when jars fail to seal from my own personal experience is when the jar doesn't have enough head space..so when there isn't enough head space food gets pushed out and gets on the seal which would make it a fail ...OR when the rim of the jar hasn't been cleaned of all residue this will also cause a jar not seal.

I do, and have done, both. This year I'll be deboning everything to make for more actual meat per jar and will use all the bones in broth, as per usual.
