Mary, the cold water makes the cornmeal stick. You get a light crust instead of a thick doughy crust.

OR.. if you'd rather a thick crust - you can slice and drop in a bowl of sour cream/beaten egg/milk THEN dredge in cornmeal/flour and fry. :drool

Probably will. Although your way sounds great being served, fresh crab and someone else to pick up tab-I added last part. Even if I don't like the tomato part, what can be wrong with fresh crab?
