I put a couple teaspoons of whey from strained buttermilk in there for starter. My house is old, dusty, and full of dog sheddings at the moment, I was sorta worried about contamination.
Your set up looks good! I rubber band kitchen towels over the openings of my fermenting containers. I have not one, but two shedding St. Bernards who also sling drool and what nots about the kitchen when they walk through shaking their heads. If I have not died yet from contamination, you wont!

I make kimchi so I am sure that is lactofermenting :)

all kinds of kimchi out of all kinds of vegetables I love the stuff


if you have never made kimchi you should brilliant way to preserve vegetables

the Korean people have this subject down!!!!
