Tell us what you cooked and ate from the garden. Include pictures and recipes whenever possible!

My grand daughter and I harvested 68 pounds of potatoes from my leaf/compost piles May 24, Saturday. I boiled potatoes, added butter and rosemary, that night. The next night we had potato soup. Last night we had mashed potatoes to go with roast beef. We also had the first eggplant for the season, split in half, baked, topped with cheese. Yummy!

Tonight I took the leftover mashed potatoes, about a cup full, and put in a mixing bowl. I added 2 small eggs, 1/4 cup chopped onions and 1/3 cup of flour. I mixed it all up with a fork, made small patties and dropped in hot olive oil. I love potato patties and make sure I make enough mashed potatoes to make them the next night.

The potatoes I grew in the leaf pile are so pretty, I had to include a couple in the picture!

That looks delish! I didn't cook anything from the garden, but we did enjoy 2 large bowls of our first lettuce of the season. It was very tasty!

DH brought kale in last night and asked me to make THE soup. ;)
I have a rhubarb custard cake in the oven right now and will have asparagus with dinner. So far that is about all that is ready here in Eastern IA. But everything else looks good. Just came from weeding and watering. Maybe we will have peas in a few weeks. strawberries, too!

Picked one Japanese eggplant, 3 lemon squash and a handful of chard. Fried the squash and eggplant. Yum!

@baymule - nice potatoes! ... the patties sound yummy, will have to try them.

Not much to harvest here yet, but some chives went into an omelet and I picked a bunch of rhubarb for a crisp yesterday...sorta like pie, but I like it better...

Can I have the recipe for that crisp. It looks delicious :drool or better yet, can I have the crisp :D

That crisp does look yummy!..Wish I was more of a baker..

I chopped up the last of leeks that I planted last spring, and added them to a stock I made from left over chicken bones.

I freeze the stock in plastic yogurt containers, and in the future I use it for soup, liquid for a stew, or for cooking rice in. Beats having to buy packaged soup stock, or using the salty powdered type.

Oh, and Asparagus for supper tonight...again..Certainly getting my fair share of it recently.

I want the recipe too! I don't have rhubarb here, but I'll improvise!
