If you are starting from seed and can find it (I've seen it sometimes on ebay) there is a Black Walnut relative called Hind's walnut that has a few advantages over the regular kind. The main one is that the shell lacks the "ridges" of the standard black walnut (it looks like an over-sized hickory nut) which makes de-hulling a LOT easier (you can clean them off in a sink with some steel wool rather than the whole drive over and let them sit method)
