Now that you have used the roundup, I would definitely add as much organic matter as possible. You might use straw, which is sold for bedding in farm stores. Don't use hay, it will only add more weed seeds to your garden. Straw is made of the stems after the grain is removed. It is much cheaper than hay. When I have money I use alfalfa to mulch my garden beds. I don't mind finding the occasional alfafa plant growing in the garden. Alfalfa adds a lot of good nutrients to the soil. I have used newspapers and cardboard as mulch in the past.
We use plastic and old carpeting to keep down the weeds. We like carpeting best. It lets water through, but the lack of light kills the weeds eventually. When I move them the chickens jump on all the earthworms and slugs etc that get exposed.

actually wheat straw has a greater chance of getting weed seed. Alfalfa hay is cut every 30-45 days so it would have to be one quick weed to go from being cut down to developing viable seed.
