Well the Painted Mountain is 1' high and doing okay despite us having cool 70 ish days then the next day going to 92 or so. I'm really nervous though, I have never had trouble growing corn but I have a lot riding on this.

I tend to prefer paper if the seed has been recently shelled as it may not be fully dry and can sweat in the plastic bags where as the paper tends to breathe.

@Jared77 I have thought about sending some seeds to suitable places in the USA, I'm in the process of trying to grow out and hand pollinate for a decent quantity of pure seed for each of my rare Australian squash. I also have to check some for stability which is time consuming.

I think it would be worth while as I don't see much squash breeding going on for home gardeners, especially with their needs in mind like in your situation something fast but not sacrificing eating or keeping quality. Clean and dry those seeds pretty please :) I really like that big heart...

They should be fine to eat, one of the folks I exchange gardening advice with has grown them the same size as a rugby ball and they were still as delicious as the "regular" size ones. I think you might want to keep growing sweet potatoes at this rate :)
