The trick to making good pickles is to grow 'pickles'/ pickling cucumbers and not slicing cucumbers.
Pickling cucumbers were developed to go through the brining process and have a lower moisture content thus giving a higher quality firmer product.

Wow, don't say that to loud because my Golden Bantam has always germinated just fine here in N.E. Ohio (about 240 mile North of you).
Golden Bantam matures in about 80 days so even if you don't get the corn in the ground until late June you should be picking corn in August.

By the pickles being soft and salty I would say that the amount of salt was off. Was the recipe for presser canning, freeing, hot packing, or steam canning, what type of canning method did you use and what type of Salt did you use?

You may want to do a simple soil test to see if it isn't your soil, but other than the phosphorous being unavailable but potassium could also be the problem.

There are a number of reasons for tomato stems to start turning purple, If the temperatures are cool (below 65) that would be my first bet for being the problem IF the plants were growing in a soil-less mix.

You can trim Determinate tomatoes in fact all tomatoes will do better if trimmed. With Determinate tomatoes you only want to trim the suckers/ shoots below the first flower cluster.

The regular plastic that you get from Home Depot is not UV protected and will break down with in a year if not less.
You would be best to get the Greenhouse plastic, it is UV protected and most will last 5 year+.

On the bell peppers,
They are to me heavy feeders, if you want lots of big peppers you need to feed them.
This is a idea on how I plant mine.
1- Dig a whole about 2 times as deep needed,
2- Put 2 tablespoons of 20-20-20 fertilizer in the bottom of the whole along with a hand full of well...
