    Bitter pickles! :(

    Yes, I'm sure it was the cucumbers. Do you know why they get bitter? watering schedule, too small, too big? And what about letting them sit for a while, would the bitterness mellow out, or do I have to throw the batch out?

    My pickling cucumbers turned out bitter, but I didn't know until I made pickles with some of them. Will the bitterness fade over time or do I have to throw them out? What causes the cucumbers to become bitter? *sigh* I'm so dissapointed. :(

    I do pretty much the same thing but throw the tomatillos under the broiler to blacken them a bit, and add some lime juice, YUMMY!

    It must be the type of ants then! Yuck, mine are just black ants and they seem to go for the flowers. Good luck with the DE, I *heard* that baby powder does the same, but DE sounds safer.

    Well, I know DE, baby powder and I've been told sprinkling cornmeal about will all kill them, but with the cornmeal I'd worry about attracting rodents... Weird because the ants are pollinating mine too, I don't have any pods yet but they did the same last year and left the pods alone. Good luck!

    Can't find pickling salt!

    So long as it does not have iodide, sodium bicarbonate, dextrose or any other ingredients. these are anti caking and nutrient additives that will mess with your pickling recipies. Read the ingredient list, it should just say SALT nothing else... Most kosher salts are just plain salt. same thing...
