When I pull the soil out from around my onions, I pull enough off so that it looks like the onions are just setting on top of the ground. I do this after they have established a good root system so they don't fall over. With the very heavy red clay we have here it is the only way to get onions...
"Bulbing" depends on where you are at and the type of onion. Around here it usually happens around mid-june to early july. I usually take enough soil off so I can see where the bulb curves under to where the roots are.( If that makes any sense at all)

Avg. last frost here is May 5 ( I think) so we'll probably get at least 1 more. I just dread it. That is a cold job. I've almost cut it down but I just can't bring myself to do it. I am thinking about planting some late apples out behind the barn though.
I get so tired of this. Every year my apple tree blooms and about a week later it'll frost. Then I have to go out at 5 AM with the garden hose and spray the frost off of it if I want any apples at all. Stupid tree.

Good luck to you! I think you will be surprised though. A whole lot of the whole "organic" farming stuff is just basically going back to the way thing used to be grown. If you just look back 60-70 years chemicals and sprayers just weren't readily available or affordable to the average gardener...

Too much poop would cause nitrogen issues and I think it would probably be evident in the leaves. On most stuff nitrogen burn shows up as yellowing starting inside the leaf veins and spreading outwards easy to cure though just lots of water. Other than the pests (which is a good possibility)...
