If nothing else it is an interesting-looking plant. Kind of reminds me of a kohl rabi. Until this year I had never tasted a kohl rabi, now I'm trying to grow some. So perhaps next year I will try the fennel as a landscape thing and if it tastes good, well that's even better ;)
The ones I have growing are tart-sweet. Pretty small with only 1 big seed inside. The skin doesn't seem to be much different from a commercial grape. Folks in these parts make jams and wine with muscadines....

When ya'll are making your own soil, what do you do with the earthworms that have moved up into your compost? My compost area is a square area about 4x4 where I take the goat's hay droppings, stuff that I muck out of the chicken coop plus where I dump the barrel that gets all our kitchen scraps...
