I think taking the larger outside leaves a few at a time, rather than cutting the whole thing off at the base, is what keeps the plant regenerating. Most mesclun type varieties are meant to be cut off at the base (I think), and are done for the season then. Sow a lot of it, in that case!

Good luck with your potted maple! I found a to-die-for shaped thread-leaf maple a few years back for a potted deck tree. I was in love with it! But darned if it didn't croak the first winter (and I even kept it sheltered in our outdoor shower and wrapped in leaves and other potted trees)...

If I were starting an herb garden from scratch, the first things I'd plant would be rosemary, thyme and chives (all come back year after year in Zone 7 or warmer), and then when it gets warmer, I'd add basil.
