You could also roast it in the oven then freeze, then it is ready to use as soon as it's thawed. I do this with beets & pumpkin as well. The roasting also gives more depth to the flavor......

Sort of sounds like you need more nitrogen. I've read in many places that straw used as mulch leaches nitrogen out of the soil, same thing with shredded leaves...... You could mix aged manure in with the soil in the fall and in the spring add some compost. Not sure where you live, but this...

I think it depends on the variety you plant. Mammoth dill grows huge heads for pickling but little foliage. Fern-leaf dill gets plenty of "leaves" but a puny head. I usually grow some of each kind.

For a seed source, I'd recommend Richter's. They have just about everything.

I tried growing it in PA, but I think a longer growing season is needed, because it looked like the seeds didn't develop enough before it got too cold. I'm going to try it this year in VA, hopefully with better results!

Kohlrabi would be my unusual veggie. If only I could find some taro I would be happy.........
