I am just going by what I learned growing up. When farmers put manure on their fields they do it in the fall. This gives the poo time to age. By the time spring comes it is not harmful to the plants. I think you should compost it to be safe. :)
I use whatever we have in the garden. The meatier types are better for the simple fact that you don't have to drain some of the juice off. But in the end most tomatoes make tasty salsa.
Our list is so long this year! We are trying to be self-sufficient at least with our veggies year round this year. So here is the list:
tomatoes (beefsteak, amish paste, brandywine, yellow brandywine and a few more TBA), potatoes (red and gold), yellow onions, green beans, pickling cucumbers...
