With rhubarb season fast approaching here is an easy recipe for rhubarb jam:
5 c rhubarb
4 c. sugar
1 c. crushed pineapple w/juice
Boil 12 minutes.
Add 1 pkg red (we like strawberry and raspberry) jello.
Stir and let cool. I freeze mine.
I don't have a recipe for jam but I do have this one for Gooseberry Bars that is very good.
Crust:
2 c. flour
1 c. quick oats
1 c. brown sugar
3/4 c. oleo
1/2 t. soda
Filling:
3/4 c. water
1 1/2 c. sugar
3 T. cornstarch
3 c. gooseberries
Combine crust mixture and put 3/4 in bottom of 9 x 13...
WOW!!! That looks great. I can't wait to get in my garden. The weather here in Iowa just is not cooperating yet. Rain, rain, rain for the next few days. Maybe if I think sun it will help :coolsun
