I found this recipe in the latest Vegetarian Times magazine (though I'm not a vegetarian, I only eat meat a few times a week)
2 lbs fresh figs, trimmed and quartered
1.5 cup sugar
12 oz dried figs, trimmed and sliced
3 tbs. lemon juice

Does anyone know how to tell if one has skunks living on their property?
Skunks have been around and about the neighborhood (ESP the last coupla nights...man oh man...)
But how can I tell if they are living on MY property? If so I want to get rid of them fast!:o

I opened a jar of pickles that I canned a few weeks ago. Yummy! Now, how long do I have to eat them all up?
Same with the jam I made.
Since there's no preservatives in them, I'm assuming I cannot leave them in there for a long time.
Another reason (I believe) I'll need to can in 1/2 pints...
So firstly, here's a photo of the b&b pickles I made from the Ball package last week (which, btw, I gave away all the rest of my Ball pickle mix, because I still find the directions irritating and confusing.) As you can see, I didn't pack enough in, as they're all floating. I haven't tried...
and all they had pickle-wise were organic regular cucumbers (they're no longer than 5 inches)
Can I use those to make the Bread and Butter pickle recipe with the Ball packet?
So my first time canning? Well I checked the jars today and they were cloudy... :(
so I threw the contents all out (safely) and am cleaning the jars with bleach and then detergent.
When I was filling everything up, I was sure I was correct w/the headspace...
But when I looked at the jars...

Changing canning recipes - some people putter with their recipes by adding more spice or whatever, but, and here is the crux of my question, I'm guessing that the only thing you need to NOT CHANGE is 1) the vinegar/acid...
I know this is probably a really dumb question...
can you write on the lids of the jars after they have sealed without unsealing the seal?
I'd like to just use a Sharpie (or, as we said back in the day, a Magic Marker) on the lid...since you throw the lids away anyway. Plus I don't want to use...
First time canner here! I tried a bread and butter pickle recipe from the Ball book.
Just took the pints out of the canner - one immediately went "clipop" and sealed. Of course, I'm sure all the others won't seal and I'll be a failure!
I'm a voracious reader/researcher, but all the reading...
