Lavender- that is great info. Just put it into my gardening journal. Can't wait till harvest time to try it!

Ordinarily, I pick my green beans & blanch them within a couple hours of picking, then partially freeze them in the bag before I vacuum-seal it. Last year's fiasco of not blanching the beans was an experiment because the woman assured me that there was absolutely no difference in quality. The experiment was a total waste of green beans, because every now and then, I cook a package and feed it to the chickens. They don't complain, thank goodness.

Dh & I like our beans on the small and tender side, same thing for squash, cucumbers, and okra. In case anybody is wondering, the bean variety I raise is Emerite, an open-pollinated green bean that has excellent freezing quality, imo.

Yes, I can Dilly Beans too. They are yummy and perfect for a quick fix-it meal when I'm rushed.
