I was given 320 canning jars today and about 50 quarts of them are olives. I am going to empty all the jars into the compost pile. They are from 1999 and most of the fruit is dark and disgusting looking.

Can I compost the olives without the brine?

I don't see why not. They are plant based. When I moved here several years ago, the cold room was full of canned fruit, veggies, pickles, etc. We dumped them all in a pile and covered them with soil to keep down the flies. Didn't seem to be a problem doing that so why should olives be different?

They should compost fine....just make sure to mix some leaves or other brown matter in with them. 50 qts is a lot to add in at once.

It is, isn't it? Fortunately, I actually have multiple piles and can spread it around. I was worried about what the salt would do, but I think I will get rid of the brine elsewhere. Appreciate all of the input !!!

Most olives are cured in brine. Depending on how much sodium is naturally in your ground you may or may not want to add that much salt.
