after the first light frost kills their vines? They seem to be nice and firm and fine. Will they be bitter? I made low-fat Eggplant Parmesan sandwiches with this variety the night before the frost, and they were delicious! They are not the big fat dark purple variety, but rather, a slender, pencil-shaped lavender and white type that doesn't get very big. My neighbor grew them for me. Would anyone know what this variety is? I'd like to grow more next year. Can I save seeds to grow, or would it be better to buy plants? I was surprised to learn I could steam these, and then cut them and dip them in bread crumbs and bake them. Very flavorful!

I always grow my eggplants from seed. I only grow (and devour) japanese eggplants. The slender white or purple ones. I just bought some Thai eggplant seeds from Seed Savers and will give those a try this spring.

I don't get frost where I used to live, so don't know that answer for you.
