Cannin Winter Squash

I dont have a proper storage place for the winter squash we have, and I remember as a child spending hours cutting up squash for our mom to can. She doesnt remember if she pressure canned or water bathed....I dont have a pressure canner....so how do I go about preserving all these squash?

Water bath won't work on winter squash; it's not acid enough. At sea level it's 90 minutes at 10 pounds.

Exactly. Also do not mash winter squash to can it. Cut it into cubes 1" on each side. Mashed winter squash is too dense to be sure it is heated through.

From my Ball book,

Cut into 1" cubes. Do not mash or puree.
Cover with boiling water. Bring to a boil and for 2 minutes, until heated but not soft. Drain and discard liquid. Hot pack and ladle in fresh boiling water to cover. Process pints for 55 minutes and quarts for 90 minutes.

Strange, it does not give a head room.

Expect about 1 quart for every 2-1/4 pounds of squash.
