If you add pectin from a box or from green apples, you can make jelly out of pretty much *anything*, including garlic or wine or herb tea or Tang
I've seen a promising-looking recipe for 'carrot marmalade' I keep meaning to try - IIRC it's a semi normal citrus marmalade but with lots of finely shredded carrots added, sort of instead of the traditional orange peel I guess.
