Cold beet salad...

I have had a wonderful harvest of beets this year. I am pickling some and freezing a bunch, but last night I made something that we thought was delicious! You lay spinach leaves on a platter, cover them with sliced cold beets, sprinkle with tarragon and feta cheese and add oil and vinegar, s and p. It made a lovely cold supper on a hot night! I wasn't sure I would care for the beets cold- but they were very good!

Thanks for the tip, I have a variety of beets planted and was wondering about new ways to use them up. I love feta cheese and will put it on anything so this is right up my alley.
