Crabapple Jelly and Crabapple Butter Recipes

I finally got to my crabapples. The deer had cleaned all the lower branches but I still had enough for a batch of butter and jelly. I also used the leftover pulp from the jelly to double my batch of butter, making 6 pints instead of 3. The jelly uses additional pectin and recipe is customized for higher altitude issues. Both came out super yummy!

Next year try some Crabapple Jelly with Rosemary -- it's sublime. You just add the sprigs of herb to the apples while they are cooking.

I love it on toast or with venison,pork or lamb.

The addition of rosemary to ordinary Apple jelly is great too.
I am just waiting to make Apple & Rowanberry jelly (Mountain Ash). They are not quite ripe yet.

Hmmmm..... How did I miss this when you first posted it? I LOVE the idea of adding Rosemary. It would make it really special for jelly made as gifts. Do you mind if I use your idea as a "variation" in the recipe I posted? Do you add a little sprig to the jar of jelly before sealing it also? I bet that would make it very pretty.

I agree with Hattie, Injunjoe. We need to get her in here. Being new here, I have no idea of the pictures Hattie is referring to though. I will have to search all your posts when a get a few minutes.

9/12/09 Variation: Compliments of Hattie the Hen at The Easy Garden Forum
Add sprigs of rosemary to the apples when cooking. Delicious on toast as a compliment to venison, pork, or lamb. For a special touch, also add a small sprig to jars before sealing. To prepare, plunge rosemary in boiling water to kill any bacteria. Set aside to dry. Add to jelly just before sealing jars.
