Okay! This is what I did; browned 1# ground pork with the onions and garlic and eggplant. Used Ragu spaghetti sauce. Used half a bag of StoveTop stuffing crumbs in place of bread crumbs and mixed them into pork mixture as well as sprinkled into boat. Changes I will make next time; skip putting it in the boats, way more cheese, and all of the stuffing crumbs. Needs something to soak up the juices. It will be a casserole instead of eggplant boats. Yummy!! Lloyd and I really enjoyed it.
plus you can add what ever type of meat that you wish..... now or once thawed
