I only expected enough seed this first time around to grow a bigger crop next year but I got more than I expected so I decided to cook some up. I found a recipe for Morocan style and boy were they good. No gas buildup like beans.
I used chicken stock in place of water. Onion, garlic and a couple of San Marzano tomatos fresh from the garden. Spiced them with cumin, a touch of cinnamon and turmeric plus a couple of dried chili peppers. A healthy splash of olive oil and then cook them till all of it cooks down to a thick sauce. One of the best things I ever tasted. If you want to get fancy you could put it into a casserole dish and top it with cheddar cheese for a main course.

Awesome that you got more than expected!! I think its hilarious that you say "get fancy with it" and make a casserole, thats SOP (standard operating procedure) around here. Throw it in one dish, add cheese, put in oven and walk away!
