For all you tea junkies......canned iced tea concentrate

How to Can Iced Tea Concentrate:

1) Boil 10 cups of water

2) Drop in 40 tea bags (I take the tags off)

3) Steep for 5 minutes and remove bags

4) Bring to a boil.

5) Add 4 Tbs Lemon Juice and 9 cups of sugar

6) Boil for one minute, stirring constantly

7) Pour into prepared 1/2 pint jars leaving just 1/8" head space

Wipe rims, top with lids and rings

9) Process in a waterbath canner for 10 minutes

10) Remove from waterbath and let sit overnight.

TO prepare Iced Tea: Pour one 1/2 pint jar of concentrate into a 1 gallon pitcher. Add ice cubes and fill the rest of the way with fresh water. Pour and enjoy!

Dont look at me! I don't drink the stuff unless its brewed hot and its winter here in Michigan. Someone posted the recipe and pictures of canned ice tea concentrate. With all the responses I saw to Seedcorn's posts about the sweet tea I figured I'd pass it along.

My experience with sweet tea was in Zebulin N.C. and I about gagged because it hurt my jaw it was so dang sweet! Ill stick to lemonade and MAYBE and Arnold Palmer if both are there to mix my own thank you very much :D

I think tea may be too low in acid to can at home - the ph is around 7.2. If you ever noticed that commercially canned ice tea is very lemony to reduce the ph.
