freezing potatoes????

Can you freeze potatoes? Specifically, I am think french fried or rather french "baked" for health reasons. I would love to be able to eat some of my potatoes in the summer months as french fries instead of buying the frozen ones in the store. ;) We have a deep freeze and a food saver so long term storage typically isn't a problem.

I haven't dun it - and, maybe you better wait for someone who has. But, I can easily remember when frozen french fries showed up on the market. (This must have been pre-McDonalds ;).)

The company that started this was Simplot in Idaho, "Mr. Spud." The french fries are cooked before freezing. Prepping for the table just amounts to re-heating.

Many people do freeze french fries. You have to blanch potatoes first. I love my canned potatoes. If you have a pressure canner-try it. The potatoes taste delicious and are ready to go on those nights when you need a quick dinner....

I recently tried something 'new to me'. Some potatoes from the store were starting to get soft and sprout, so we shredded them raw and put them in freezer bags. I've been taking out the bags and using the frozen shreds in casseroles, just throwing them right in there frozen. Its been good, definitely adds to your cooking time but thats okay with me. I pretty much just decided to treat those potatoes like zucchini, which i shred and freeze raw as well.
