So I've harvest a couple gallon bags of the tenderest, nicest snow peas I've ever grown! I'm in LOVE with these things, even though the vines are monsters.

I've never had so many I could freeze them, we usually eat them all fresh... then the season is over before I know it. So how do I freeze them? I know my beans do horribly, so I don't even do those anymore. Some things I have to blanch first. Do I need to blanch these before I freeze them, or freeze them fresh and they'll be fine? I want these for stir fries over the summer.

I think you'd have to blanch them. Drain well or pat dry, then lay them out on a cookie sheet to freeze up before bagging.

My snow peas are now blooming. Can't wait for that first crunchy, sweet pea! :D

Blanch them for 3-4 minutes in boiling water. Chill immediately in water and ice. Drain pack and freeze. I string my snow peas. I use them in soups and stews. Mine do not hold up well enough to serve as a veggie side. I grow sugar snaps.
