Has anybody out there made gooseberry jelly or jam? I've got a bag of gooseberries in the freezer, enough for a batch of jam/jelly, but would appreciate any advice. I was going to thaw them out, run them through a chenois to separate the juice from the seeds, and strain this through cheesecloth overnight before making the jelly. Does this sound like the normal way to do it?

I've not made jelly out of them, just jam. (Mmmm, good :)) But usually (ie. using fresh berries) for jelly you would heat the berries briefly on the stove in minimal water to get the juice coming out. Then smash around in the pan and put into jelly bag. Usually you'd let the seeds separate out in the jelly bag, wouldn't you? (Or for jam, leave them in, of course)

If your gooseberries contain a high percentage of underripe ones, you can get it to jell (at least reasonably) without added pectin, but if these are ripe gooseberries then you may want to add boxed pectin unless you want more of a syrup type thing.

Have fun,

Pat
