I've tried 2x to make pesto. Both times, I thought I followed the recipe. It's flavor reminds me of black licorice, not a good flavor for me.

So could someone explain what it is to taste like. Have lots of basil so need ways to use it. Love flavor of basil w/tomatoes.

I simply use basil in heaps, I add italian, lettuce leaf, Thai basil a little oregano and parsley to mine. I add garlic cloves, olive oil and walnut. I mix this to taste!

(I always let it sit overnight... it really gets the flavor together just right. The flavors the day of are just not so good to me.)

P.s. - You say 'black licorice'? Are you adding Anise to this recipe?! I am NOT a fan of Anise.

Different varieties of basil are dramatically different in taste. If you're using a basic sweet or Italian basil, I can't think of why it would taste like licorice. Are you using a standard recipe with olive oil, pine nuts, Parmesan cheese, garlic, salt and basil?

Yes, and no anise. Guess I just don't like pesto.

I absolutely love basil- I mean I really love it, but I don't like pesto! Isn't that weird? You would think it would be my favorite food....I keep trying it thinking it will be different.. Oh well, I'll stick to fresh!

DrakeMaiden has a recipe for pesto that doesn't use basil. The recipe calls for garlic flower buds (is that what they are called?) in lieu of basil and garlic. I've tried the recipe and it was to die for.

Perhaps if we are all real nice to her she will share the recipe :fl again.

You can also use different green herbs other than basil.

I love pesto.... and I like it a day old and on bread and NOT pasta!!!

I will even eat it with Tortilla chips... but again... NOT PASTA!!!!

To each their own. ;)
