I just went out and dug up a few pounds of potatoes... I also had a bag left in the house. So what to do with all these potatoes?! They weren't going to store long here, they were too new.

So I've got a GIANT pot on the stove simmering away ready for some potato soup!

I found a whole SLEW of recipes on BYC today.

So what recipes would you like to share?!

I like to make my quiches using diced potatoes as the crust.

My MIL has a recipe for Cracker Barrel potato casserole...I will see if I can find that. It rocks!

Also good is cutting up potatoes (esp new potatoes) and putting them in a foil packet or baking dish covered with foil and tossing in any and all of your favorite veggies, a tbsp of butter and a healthy sprinkle of cajun seasoning--seal packet and bake at 350 for about an hour. Easy and pretty healthy!

This potato soup I made is AWESOME!!!!

I made so much I brought some to my neighbor's house. They were very thankful... I now have 10 green peppers from their garden to stuff.

I just finished mowing the lawn, so I guess I can cook a bit... but I have a ton of dishes to do first!

GEEZ.... all this stuff to do so I can cook... so I can eat... so I can just pass out!!!!

(Did I mention I've been sick since last week?)

I am just LOVING recipes this month. I love fall... all I want to do is COOK!

Soup sounds wonderful! I made some Monday, with veggies from the garden. Something about the cooler and shorter days, leads me towards the stove too! Enjoy!
