Recipe Challenge - I need your help for the State Fair

I have the recipe information listed on BYC and what I am up to. I am TESTING recipes currently. This is one of them so far:

What I need is willing people to try their hand at making this and tell me how easy, complicated the recipe is. What you liked about it, what you didn't and what you would change.

If you replace ANYTHING in the recipe I have up, let me know when you give me your reaction. I am trying for a blue ribbon with this puppy.

(P.s. - The contest is for the best apple recipe that is NOT a desert... everything you make has to be savory.)

I have asked my wife who is A great cook and loves gourmet cooking to take on the challenge tonite for dinner I have printed the recipe she is going trough it to make sure she has all of the igreidients. I have volunteered to go to town to pick up anything she needs to make it, it is a 70 mile round trip. It sounds like it will be delicious though. We have 2 DDs who don't like anything so if they eat it even while complaining it will be hit. We will let you know what we think of it tonite or first thing in morning.

Oh that sounds fantastic! I got some good reviews from friends and a neighbor's family... but part of me think they are just being nice because its ME! :lol:

My friend Stef insists this is a hit and will win... so I'm going to enter this in the fair as far as I'm concerned....

Also planning on entering baked Potato skins with apples and dill w/ Havarty cheese! :)

vfem, I make my pork in 2 ways--bbq it OR cooking it with potatoes, carrots, onions, tomatoes AND apples or pears or peaches. I know it will taste fine, but my advice is to sparingly add the strongest spices, like sage, so that the taste is subtle. Just add and taste and add and taste, and you'll get it the way you want.
People often (especially at restaurants :/ ) overpower you with the spices that they add to meat. I think they sometimes ruin the meal that way, IMHO.

Thank you for your advice... I was trying to be careful with spices as not to offend anyone. However, I needed help because I could not taste this once I added the pork. :( I don't eat pork or beef.... so I'm of no use. Though, most of it is flavors I love with chicken... however, I thought 'chicken' was too weak to enter. :(
