Just found a new one and it's yummy...

CHUNKY MEDITERRANEAN DRESSING

This is very healthy and tasty salad dressing or dip. It works great to flavor a Greek style salad or crisp greens such as romaine, but it’s also great as a dip for pita bread or veggies.

1/2 cup feta cheese
2 cloves garlic
2 tablespoons of fresh basil
2 tablespoons of sun-dried tomatoes
1/4 cup olive oil
1 tablespoon lemon juice
1/2 cup plain yogurt
pepper to taste

DIRECTIONS
Combine all ingredients in a food processor or blender and puree until almost smooth but still a little chunky.
Toss with greens or Greek style salad or both or use as a dip.
Use immediately or store in the fridge for up to 5 days.

VARIATIONS
Add a roasted pepper to this before pureeing for added flavor and smooth texture.
If you don't have a food processor you can chop everything up by hand then stir to combine.

The deli in our local grocery store has a deli, most of the salads they sell are made in store. Had this one on their Greek Salad, YUMMY.
Of course I had to find out the recipe for the dressing they used, so here it is.

Do you have a favorite salad dressing, post it here. Now is the time for a cool and delicious salad on a hot stinky day.

Annette.
