When summer is in full swing, and you have no energy to cook, what are your simple summer dishes? My favorite's from my mom sliced cucumber, tomato and onion with Italian salad dressing. My friend Kristine turned me on to sliced tomato topped with slice of mozzarella cheese and basil leaf so good (better when dripped fig oil over) What are your quick and easy summer dishes ?

I do the thing with the tomato, cuke and onion and Italian dressing, too. But not too much dressing.

When we're over run with tomatoes, we have tomato supper. We each get a plate of sliced tomatoes and eat until we're miserable. Well... not too miserable.

Carrot salad. Shred carrots, add raisins, pecans, chopped sweet pickles and a glop of mayonnaise to hold it together.

Tomato sandwiches always good.

To make a tomato sauce for spaghetti is real quick. Plus someone had a recipe for one using fresh that cooked in hot spaghetti. Should have saved. I know it is cooking but it is no mess and fast.

1.homemade sub sandwiches toasted in the oven......
2. grilled italian sausage with peppers & onions with a pot of dirty rice.....
3. a big salad with grilled chicken ......

promised the dw that i would make wonton soup tonight....

I also like the tomato and onion with a drizzle of Italian. A also like to cut up fresh zucchini, brush them with a bit of oil and throw a dash of salt, pepper and onion powder, then it's off to the grill. But, my favorite is a couple of slices of fresh tomato on cheap white bread with a slathering of real mayonnaise and a dash of salt; reminds me of being a kid again.
