Now that I got my new pressure canner (woohoo) I am about to sell my old boiling water bath canner. I just can't afford the space for these two big bulky items that do the same thing. Anyway..
with all this talk about steam canners, it got me wondering.
In a boiling water bath, you cover the jars an inch over the top with boiling water and I can do that just as easily in the pressure canner as I could in the boiling water bath canner.
But, instead of boiling water bath, couldn't I steam things, in a few inches of water, in my pressure canner? Would that do as good a job as a boiling water bath? Would I need to adjust the amount of time the good were processed? I'm talking about for things like jelly and tomatoes.
