Tomato salad, to can

DD make an awesome salad last night with my cherry tomatoes, cucumber, and onion and we topped it with Good Seasons Italian dressing--the one with the package that you mix in a cruet with oil, vinegar and water. We saved some in a canning jar, and it occured to me that this would can very well. I wanted to share bc we all love the taste of summer in the middle of February. :D

You saved the salad in a canning jar? Sounds good as far as leftovers........but to can it? How would you keep from having soggy salad? Great idea if you can pull it off. But I thought the whole idea of salad was to have that fresh crisp crunch. :rose

I've canned tomatoes, and yes, they'll probably get soggy. But the taste, I think, would be worth it. I'm gonna try making the salad, pouring it into my jars cold, then put them in my bath with COLD water, and then heat to boiling. I've done that before. You just watch and start timing the jars after it starts boiling. It was so delicious that I don't think I'd mind the tomatoes a little cooked when I eat it in the winter. Plus, I could add some pickle crisp to it.

Sounds Like you will have some experimenting to do, let us know what you come up with. You should post that recipe sounds great!

I haven't used the canned salad before because i think the taste will change a lot. But now I would try to enjoy it in the middle of February. :lol:

My mother tried it once, it didnt turned out good, because it needs something else to preserved the flavor. and yes it got soupy.
