When to pick pears for canning?

I understand that pears are best picked green and left to ripen in the house. The question is, how green? I would like to can them in syrup. The pears are now green, but just past the "raw potato" stage...What do you think?

If you can pick the pear up, lifting it from hanging down, and it comes off the tree fairly easily, it is mature. We always put them in the fridge for a couple of days then out in the ripening room (aka breakfast room) to finish. :)
