Austrian winter peas were not sufficiently hardy as a cover crop in my garden. More important, they are not considered a food crop. I guess that it is the amount of tannin in the seeds.

Windham is hardier but still used primarily for livestock and wildlife forage. Lynx is a variety I was just reading about. Low tannin, large seeds, hardy to below zero F. It's interesting that the only source of seed in smaller packages in US that I can find is in Florida (link).

Earliest shell peas outta the garden? Ya know, what I was mostly thinking about is pea soup ... I could sure enjoy a steaming bowl full for lunch :D.
