Zucchini Relish Recipe

I've been asked to share my zucchini relish recipe. It took me a while to find it. It is from an old (50's or so) recipe pamphlet by Leslie Salt. The title is: "Make your own Pickles, Easy Leslie recipes for pickles, relishes, chutnery, sauerkraut." I couldn't find a date of when it was published.
ZUCCHINI RELISH
4 cups ground zucchini
3 cups ground carrot
4 1/2 cups ground onion
1 1/2 cups ground green pepper
1/4 cup Leslie Salt
2 1/2 cups vinegar
3/4 cup sugar
1 tbsp. celery seed
3/4 tsp. hot mustard
Combine all ingredients and cook 20 minutes or until vegetables are tender but still crisp. Pack into hot, sterilized jars. Process 20 minutes in boiling water bath. Makes 4 to 5 pints.

Thank you for sharing. In a couple weeks I should have zucchini, carrots and onions. It will be fun to put up what I grew.
