Mary if you are going to make it and eat fresh no need for that much vinager but if you are going to can it yes you need that vinegar.
Just think about sweet relish it is sweet and tart at the same time, the tart is vinegar....

Thanks @majorcatfish that looked like something I would like. The sweet relish I made with cucumbers was not a hit. No one would eat it. :( We do like the taste of fried green tomatoes , so I may be giving this a try. ;)

LOL, they all gave it a taste, but never wanted more. So I have many jars that are too old for cunsumption and need to be emptied. Such a waste. But I want to free up the jars now.
