Just cut it if you wish , then blanch in boiling salted water for a minute or two, plung into ice water to stop the cooking and retain the color, and then freeze. I sometimes free on a cookie sheet lined with parchment and then oss the frozen chunks loose into a freezer bag. That way I can use exactly the amount I need.
