Actually any pressure cooker that can be held at 10 pounds pressure for 60 minutes or so could be used as a canner. The reason some are not recommended for canning is that they just arent' big enough vertically to hold a quart jar. Remember that if you use a pressure cooker as a canner you have to have some sort of spacer at the bottom. If the jars are in direct contact with the bottom you will get a lot of broken jars.lesa said:My pressure canner has directions for use as a pressure cooker, as well.
