What pickleing spices do you use? I would like to try that as the girls and I are getting very interested in canning and perserving the harvest. Please post instructions. We have about 80 garlic plants in the ground right now and are hoping not to buy any garlic this year.

I use vinigar, I put in dry herbs, salt, pepper, somtimes a bit of jalapeno
juice, then I pit in the garlic.

I preserve it there for about 1-2 months and use the extra vinigar as a liquid spice.

I am gonna try that. Do you use just regular vinigar?

Pickling vinegar is MUCH stonger, and should be used. I plant mine around my rose bushes read to do that in one of those books all about companion planting.

Carrots LoveTomatoes was the first one, the follow up book was called Roses Love Garlic both are by Louise Riotte.

Garlic and shallots are my favorite crops. Here in Zone 7, I plant them at the same time I plant tulip bulbs.

Can anyone explain hardneck versus softneck? I thought the difference was in storage length, but I've found that both can go soft & brown whenever they feel like.

How do you store your garlic / shallots harvest?
