I haven't a clue how to pickle anything!! Oh yeah, I've tried - fail, fail, fail! Sauerkraut, dill pickles, salt pickles, even pastrami! Fail.
Pastrami! You never cease to amaze me, Steve.

I have the recipe I use for pepperoncini and pepper rings posted on our website:

We like a mix of 1/2 hot banana pepper slices and 1/2 anaheim pepper slices for making pepper rings.

Pastrami - I have a no fail method for that. It's to die for! BIL found it on YouTube. I'll go find it and start a post. BBL

I had the problem of mushy peppers in the past, too. I googled and saved this thread where a person vacuum processed the peppers. There are more pickled pepper recipes from other people in this link also. Hope this helps. Click here.
