Cooking Roasts

I never leave a roast in the pressure cooker longer than 90 min.
With Rabbits i will bake them for 30 min @ 350 then pressure cook for an hour.

we do chuck roasts in the crock pot. other than the first fry to brown we don't do much else other than put onions and mushrooms in there and then at the end put some cream of mushroom soup in for gravy (we both like mushrooms a lot so it works as a quick gravy instead of dealing with the flour or cornstarch).

if we have carrotses and taters they can go in later and they'll finish whenever. it's not something we worry too much about as it works out in the end.

an hour or two to get it hot and then turned down for some time to go low and slow.

What is everyone's favorite veggies to go along with a home cooked roast and gravy? I usually have potatoes, carrots, onions, and cabbage.
Mine varies. It might be broccoli cabbage. I sometimes have onions. I really enjoy butternut squash. So when I roast I will be putting that squash into roast as well.

I was dumb about cooking pumpkin or squash, then @flowerbug woke up my fuzzy head and suggested that I put them in the oven. And I have ever since

I love my crock pot. It makes the best ever soups and stews.

Those are some very good ideas! I will try both! I too have learned to cook the veggies separately as they get too soft and mushy if I don't
