if you can pick the beans when you want and cook them and they taste ok and have a texture you like then they're fine. :) i think the main thing for a shelly bean though is that they do shell out easy at that plump stage. there are very few beans i've had that i didn't like as a dry bean.

and then there are also shelly beans, which are harvested plump in the shell before fully dried down, usually this also implies that the beans are easy to shell out at this stage. some lima beans are also really good at this stage.

if you like greens like spinach you may like pea shoots, they taste as good to me as the pods do, but you do want the right kind as some don't taste as good. i'll eat them right out there in the garden along with pods and peas.

... oh yes. :) it is how i know that we are getting closer to bean planting time when i start seeing some poking up out of the ground. i expect i will see some in the next few weeks.

i was able to get outside today for a while. weeded, picked gravel out of the dirt, buried some bean pods and bones from a roasted chicken for a while and then went and tried to find the poison ivy in some bushes - could not find it at all. i actually sweated a little. <horror>

I wonder if it may be that they don't have as many native bees that will cross beans in Europe but I don't know for sure if that is what is going on? :)
